Dry roast 1/2 tsp mustard seeds, coriander seeds, cumin seeds, and fenugreek seeds until they turn red. Cool and grind them into a fine powder.
Add the dissolved tamarind water, salt, red chili powder, and turmeric powder to the kadai. Let it boil until the mixture thickens and oil separates on the top.
