StepDescription
1Peel the garlic and set aside. Dissolve the tamarind in water to make a thick paste.
2Dry roast 1/2 tsp mustard seeds, coriander seeds, cumin seeds, and fenugreek seeds until they turn red. Cool and grind them into a fine powder.
3Remove the seeds from the bottlegourd and chop it into small pieces. Heat sesame oil in a kadai and add mustard seeds, cumin seeds, and asafoetida for tempering. Add the chopped bottlegourd and sauté until it is cooked.
4Add the dissolved tamarind water, salt, red chili powder, and turmeric powder to the kadai. Let it boil until the mixture thickens and oil separates on the top.
5Add the ground spice powder, a little more asafoetida, and jaggery. Stir well to combine and ensure it does not stick to the pan. Cool the thokku and store it in a glass or ceramic container. Refrigerate.
